Ascorbyl Palmitate
Apart from its use as a source of vitamin C, Ascorbyl Palmitate is also used as an antioxidant food additive (E number E304). It is a skincare superstar, vitamin C.

Appearance: White to yellowish colored powder.
Odor: Citrus-like.
Melting Point: 112C to 117C.
Solubility: Very slightly soluble in water; freely soluble in ethanol.

DEFINITION
(2S)-2-[(2R)-3,4-Dihydroxy-5-oxo-2,5-dihydrofuran-2-yl]-2-hydroxyethyl hexadecanoate.
Content: 98.0 per cent to 100.5 per cent (dried substance).
CHARACTERS
Appearance: White or yellowish-white powder.
Solubility: Practically insoluble in water, freely soluble in ethanol (96 per cent) and in methanol, practically insoluble in methylene chloride and in fatty oils.
IDENTIFICATION
A. Specific optical rotation.
B. Infrared absorption spectrophotometry.
C. Dissolve about 10 mg in 5 mL of methanol. The solution decolourises dichlorophenolindophenol standard solution.
TESTS
Solution S: Dissolve 2.50 g in methanol and dilute to 25.0 mL with the same solvent.
Appearance of solution: Solution S is clear and not more intensely coloured than reference solution4
Specific optical rotation: + 21 to + 24 (dried substance), determined on solution S.
Related substances: To meet the requirements.
Loss on drying: Maximum 1.0 per cent, determined on 1.000 g by drying in vacuo at 60C for 5 h.

DESCRIPTION
Ascorbyl Palmitate occurs as a white or yellow-white powder. It is very slightly soluble in water and in vegetable oils. One-gram dissolves in about 4.5 mL of alcohol.
Function: Antioxidant.
REQUIREMENTS
Identification: A1:10 solution in alcohol decolorizes dichlorophenol–indophenol.
Assay: Not less than 95.0% of C22H38O7, calculated on the dried basis.
Lead: Not more than 2 mg/kg.
Loss on Drying: Not more than 2%.
Melting Range: Between 107° and 117°.
Optical (Specific) Rotation [α]D25°: Between +21° and +24°, calculated on the dried basis.
Residue on Ignition: Not more than 0.1%.
